The Best Books to Take on Your Summer Vacay!

If you are anything like me & have a commute where you can just sit and read, books are constantly in heavy rotation all year long. But a lot of people don't have the luxury (this will be the first and only time I call my commute a luxury) of downtime to get to read so beach vacay is where it happens! Here is a list of the books that I think are must reads this summer!

1. If you are looking for a juicy beach read, look no further than The Husband's Secret. Written by Liane Moriarty, (the same author that brought you Big Little Lies) this can't-put-down novel explores the question of "who well do we actually know our spouses?".

2. I'm sure you have seen The Handmaid's Tale series being talked about, but the original book by Margaret Atwood is a funny & horrifying yet a very convincing look at a dystopian America in the not-so-distant future.

3. TRUST. YOUR. GUT. The Gift of Fear is a must read for everyone, especially women, to embrace our intuitions. We can protect ourselves, by learning to trust—and act on—our gut instincts.

4. One of my favorite poets to follow on Instagram, Atticus brings his poetry to the pages of his new book Love Her Wild.

5. Los Angeles in the 90s was a tumultuous time (to put it lightly) & Things That Happened Before the Earthquake takes fish-out-of-water Italian transplant Eugenia right into the thick of it.

6. Sharp and witty, Maria Semple's Where'd You Go, Bernadette follows a young girl, Bee, as she pieces together random clues to find her mother, Bernadette.

7. Basically the story of my life, Girls in White Dresses follow a group of 3 girls who attend wedding after wedding of their friend's while trying to figure out their own lives.

8. OK, yes this is a cookbook and not really an enthralling novel. BUT, what better way to enjoy your reads on the beach than with a super food popsicle?! These recipes are gorgeously shot, delicious & actually good for you!

Basil Pesto Zoodles + Veggie Bullet Giveaway!

If you know me or frequent my blog you quickly realized I am zoodle obsessed. Ever since the veggie noodle has come on the scene a few years ago, I have been eating them religiously and with good reason. 

Veggie noodles let you eat your favorite pasta dishes to your heart's content without over doing it on the carbs & gluten while filling you up on vitamins, fiber, and nutrition. The veggie noodle is super versatile since you can spiralize just about any veggie you want. My fave veggies to spiralize are zucchini (of course), carrots, sweet potato, & parsnips.

In my many attempts of making veggie noodles, I have tried ALL the tools. I have a handheld julienne peeler, the KitchenAid attachment, the first generation spiralizer, the 2nd generation spiralizer & even this gadget. But the best, most efficient tool I have found is the Veggie Bullet. 


Low-Carb Glowing Skin Green Smoothie

I love green smoothies. They taste great, make you feel even better & make you look your best. 

My new favorite secret ingredient to green smoothies is collagen peptides. I have arthritis in my knees and am always looking for ways to ease the stiffness, cracking and pain in them. After doing some research, collagen is the perfect ingredient for supporting healthier cartilage and ligaments for better flexibility and mobility. 

An added bonus in addition to helping with my arthritis is that collagen helps your overall bodily health from the inside out. It strengthens bones & promotes healthier and more youthful skin tone and elasticity, as well as stronger hair and nails. So all in all, this added smoothie ingredient is a complete win win!

  • 1 1/2 cups packed fresh spinach (or use frozen spinach - one frozen square package works great)
  • 2 celery stalks, cleaned and cut in thirds
  • 1 lemon, peeled
  • 1/2 avocado
  • 1 large handful parsley, cleaned (this gives the smoothie some extra bite - feel free to leave out!)
  • 1 thumb fresh ginger, peeled
  • 1 cup unsweetened soy milk (almond milk works here too)
  • 1 TSP Matcha Green Tea powder ( I LOVE this stuff, it gives great energy & helps burn fat)
  • 2 scoops collagen peptides (my fave brand is Flight Nutrition Collagen Peptides)
  • Ice

Combine all ingredients except the collagen in your blender and blend for about 1 minute. Add in the collagen and blend to mix for about 10 seconds. Serve over ice and enjoy!
