No Bake Snickerdoodle Protein Cookies!

No Bake Snickerdoodles (dozen)
1 cup oats
1 scoop vanilla protein powder (optional, will need a bit more water if added)

1 cup raw almonds, soaked over night
1 tsp vanilla extract
2 tsp cinnamon
6-7 medjool dates, pitted
1/4 cup water

In the food processor, grind up the oats and almonds. Then add in the rest of the ingredients until a dough starts to form. Roll into balls and then flatten them with your palm. I kept mine in the fridge on a plate with parchment paper. Enjoy!
