Chickpea Pesto Zoodles

  • 2 cloves garlic
  • Juice from 1 lemon
  • 3 TBSP extra virgin olive oil
  • 1 TBSP Parsley
  • Kelp Granules (or Salt) & Fresh Cracked Pepper to taste
  • 1 1/2 cup packed fresh basil
Combine all ingredients in a food processor and grind until smooth.

  • 1 large zucchini, spiralized or julienned
  • 2 celery stalks, chopped
  • 3/4 chickpeas
  • 2 TBSP red onion, sliced
  • 3 TBSP Pine nuts, toasted
Combine the zoodle ingredients with as much pesto as desired. Finish with a sprinkle of fresh cracked pepper. Enjoy!
