Super Snack! Spicy Chickpeas

These chickpeas are low cal, spicy, and the perfect snack when you are looking for some crunch.




Spicy Chickpeas; 6 servings

Mix the spices and olive oil together in a large bowl; add in chickpeas and toss together.  Place mixture in a single layer on a parchment covered baking sheet.  Bake at 400 degrees for 30 minutes. Take out and let the chickpeas cool.  Place in the oven for another 15 minutes.  Let the chickpeas cool and enjoy!

    Silly question: why do you put the chickpeas back in the oven again after letting them cool? And for the second bake, is the oven still on 400F, or are you using "leftover" heat from the first bake after turning the oven off? Thx so much! :)

    1. Good question! Taking them out of the oven and letting them cool down for a minute first makes them crunchy and not burn. Also, keep the oven on the whole time.
