Clean Eats Tabouleh meets Greek Salad

¼ cup Quinoa, cooked
Chopped tomato
Chopped cucumber, seedless
Chopped red onion,

Chopped carrot
Handful of chickpeas
Chopped kalamata olives
Chopped parsley
½ lemon, juice
Toss all together and let sit for at least 1 hour; I left mine overnight. So good and refreshing! To make this a bit heartier, add chopped grilled chicken and a little light feta.
