So easy, so good
Handful of Spinach, torn apart
Asparagus, rough chop
1/5 of an Italian Eggplant, rough chop
1/4 cup Spanish onion, rough chop
2 Clove Garlic, minced
3 oz Chicken breast, baked and chopped roughly
2 TBSP Part Skim Ricotta
1 TBSP freshly grated Lemon peel
Fresh Cracked Black Pepper
Saute all veggies together until soft; add in chicken and mix all together until chicken is warmed through. Turn off heat and add in lemon peel, garlic, and ricotta; stir until ricotta has coated mixture. Add fresh cracker pepper and enjoy!
Extra cheese can be added in (think parm or mozz), but it does make this light and delicious dish heavier and calorie packed.
