Chia Chocolate Pudding

Chia seeds are my new culinary obsession. I put these tasty little seeds in ground meat, yogurt, salads, and even desserts. What makes these seeds so special? These little guys pack a high fiber, high protein punch and contain Omega 3, the best kind of fat you can eat.

What makes these seeds even better? They taste amazing in chocolate! Turn your favorite desserts into super healthy treats.  Mine just happens to be pudding... :)

Chocolate Chia Pudding



Ingredients








  • 2 tbsp chia seeds (I lke Bob's)
  • 1/2 C  unsweetened almond milk(I like using Vanilla or Coconut)
  • 2 drops stevia (more if you like sweeter)
  • 1 tbsp raw cocoa powder
  • 1/2 tsp vanilla


  • Mix all the ingredients together.  Put some muscle into it; I find it takes a little bit of effort to gt that cocoa powder incorporated fully. After your mixture is mixed, cover your mixing bowl and let it sit for at least 20 minutes in the fridge. The chia seeds absorb liquid really well, so if you leave for longer you may have to add a bit more almond milk or water. You are left with a delicious and healthy pudding that can be eaten alone of topped with berries.

      1. I can start; although all my treats are usually clean eats and very good for you!

        Pudding per serving:
        160 calories
        16 grams carbs
        12 grams fat
        13 grams fiber

    2. I was wondering if I can sub pb2 chocolate for the cocoa powder?

      1. Hi,

        I never used that before, but it would give the pudding a nice PB taste, which is always good. The PB2 will make the pudding a lot thicker, so I would add a little bit more almond milk as it sets up. Let me know how it goes!
